"Boubouristoi" Snails
INGREDIENTS:
- ½ kilo snails
- 40 gr. of salt
- some pepper
- 60 gr. of flour
- olive oil for the pan
- ½ wine glass of vinegar (for each content of a pan)
- 2-3 sprigs of rosemary (for each content of a pan)
IMPLEMENTATION:
- Boil the snails in salted water for 10 minutes.
- Rinse them and clean them of their membranes well.
- Mix the salt, pepper and flour, turn the snails with their opening looking down, and put them in the mixture. With your thumb, push a little of the mixture into each snail.
- Place the snails in the pan (again with the opening looking downwards) with a bit of olive oil and turn on the cooker.
- From the moment they start to boil, count 3-4 minutes and put the rosemary into the pan too.
- After 2 minutes, add the vinegar.
- Cover the snails for two more minutes, and the recipe is ready.
