Stafylinakas - the so-called wild carrot - is a widespread plant, with its characteristic flowers at the top, which we find in the meadows of the lowland and semi-mountainous areas in the spring.
It is usually consumed from February to April - May. From this, the root and its tender shoots are used, which are eaten boiled with oil and vinegar. It has a very characteristic smell and taste reminiscent of anise.
